Looking for a fun and tasty way to top your favorite sloppy joes? Well, look no further! My Sloppy Joe Biscuit Casserole is the perfect blend of delicious, sort of sweet yet savory sloppy joes topped with buttery biscuits. It’s a sure way to impress others at dinner parties and game days, or make this a weeknight meal that’s sure to be a hit with your kids!

This has to be my new favorite way to eat sloppy joes. It takes about 45 minutes from start to finish for this easy casserole and can easily be made ahead. Just put together the sloppy joes, top with biscuit dough, bake, and then enjoy! Anything topped with biscuits is just better, really. You can top this with cheese before adding the biscuits on top if you wish. Your kids will be asking for seconds once you make this.

I personally love using pyrex when baking anything. I use these specific baking dishes because they come with a lid, which makes everything super convenient! No need to dirty another container when I can just slap a lid on it and put it right in the fridge. Get yourself one!

How to make Sloppy Joe Biscuit Casserole

This is such an easy recipe to make. You can even have your children top the casserole with the biscuits. Prepping takes no time at all! (Full ingredient amounts and complete instructions are available in the recipe card down below).

  • Ground Beef: I personally like using 80-20 lean ratio in ground beef. It’s juicer than ground beef that’s 90% lean. However, use whichever ground beef you like! You can even swap for ground turkey, pork, or chicken.
  • Biscuits: The essential topping for a biscuit-topped casserole. If you’re really feeling ambitious, you can make your own biscuits from scratch, though I feel that using ready-to-bake biscuits might be a faster solution. Pillsbury buttery grands are great!
  • Yellow Onion & Garlic: Just an extra flavor boost.
  • Tomato Paste, Ketchup, Yellow Mustard, Brown Sugar, Worcestershire, Hot Sauce: For the sloppy part of the joes! Hot sauce is optional.
  • Chili Powder, Salt, Pepper, Onion Powder
  • Butter: Used to cook the ground beef and brush the tops of the biscuits!

Preheat the oven to 375F. In a skillet, melt the butter over medium heat. Cook the ground beef along with the onions & garlic until the beef is browned and completely cooked through. Transfer the beef mixture to a mixing bowl with the juices. Combine together with the remaining ingredients except for the biscuits and remaining butter. Spread the mixture evenly into a 9×13 baking dish sprayed with nonstick spray. Cut each biscuit into 6 pieces, then top the sloppy joes with the pieces. Space the pieces out as evenly as possible. If you squish them together, they will not cook properly and will still be raw. Bake in the oven until the biscuits are browned. Allow to cool for 5 minutes then serve.

  • Storage: Keep in an airtight container or wrap the baking dish with plastic wrap and keep in the fridge for up to 4 days.
    • Freeze: You can freeze this before or after baking! If you choose to freeze before baking, do not top with the biscuits until you are ready to bake. If you freeze the casserole after baking, allow it to cool to room temperature, cover tightly, and freeze up to 3 months.
    • Make Ahead: Prepare the casserole without the biscuits and keep in the fridge up to 24 hours until ready to bake. When you are ready to bake, top with the biscuits and cook as directed.
  • Variations:
    • Swap the ground beef for ground turkey, pork, or chicken.
    • Add some veggies to the casserole such as diced green bell pepper, corn, or a bag of frozen mixed veggies. Serve steamed green beans on the side.
  • If your biscuits start to brown and get too dark before the biscuits dough is cooked all the way through, cover loosely with foil. Continue baking until the biscuits are cooked through.

Ingredients

  • 2 lb ground beef, 80-20 lean
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp butter, divided
  • 2 tbsp tomato paste
  • 1 3/4 – 2 cups ketchup
  • 3/4 tsp salt
  • 3/4 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1 1/2 tbsp yellow mustard
  • 1/4 cup brown sugar, more or less depending on preference
  • 1 1/2 tbsp Worcestershire sauce
  • 2 tsp chili powder
  • Few dashes of hot sauce, optional
  • 16 oz can of refrigerated Pillsbury buttermilk biscuits

Instructions

  1. Preheat the oven to 375F.
  2. In a saute pan over medium heat, melt 1 tbsp of butter. Cook the ground beef along with the onions and garlic until the beef is browned, about 10 minutes. Transfer the beef mixture to a mixing bowl along with the grease.
  3. Combine the beef with the remaining ingredients except for the biscuits and remaining butter.
  4. Spray a 9×13 baking dish with nonstick spray. Spread the sloppy joe mixture evenly in the baking dish. Cut each biscuit into 6 pieces, then top the sloppy joes, being sure to spread them out evenly on top.
  5. Bake for 22-25 minutes, or until the biscuit dough is cooked through completely. Melt the remaining butter in the microwave, then brush the butter across the biscuit topping.
  6. Allow to cool for 5 minutes, then serve.
