Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ cup shortening
  • ½ cup hot water
  • 6 cups chicken broth
  • 1 tbsp unsalted butter

Instructions

  • Whisk together the flour, baking powder, and salt in a large bowl. Cut in the shortening with a pastry blender or fingers until the mixture forms fine crumbs. Stir in enough hot water to make a firm, but manageable dough.
  • In a 4-quart saucepan, bring the chicken broth to a boil. Add the butter and let the butter melt.
  • On a floured board, roll out the dough to 1/8 inch thickness. Cut into 2-inch squares. Drop the dumplings one at a time into the boiling broth.
  • Reduce the heat to medium and cook the dumplings, stirring gently a few times to keep the dumplings from sticking together, uncovered until tender, about 15 minutes. Spoon the dumplings into a serving dish with some of the cooking liquid and serve.

Notes

Storage: Keep in an airtight container in the fridge for up to 3 days.
Why did the liquid reduce? It will reduce as the dumplings cook. Rolling the dough into larger noodles allows more of the starch to dissolve and thicken the broth.
