Ingredients

  • 2 cups very thinly sliced russet potatoes about 2-3 potatoes, unpeeled
  • 1 tsp salt or more to taste
  • 1 tsp garlic powder
  • 1 ½ tsp pepper
  • Canola Oil for deep-frying

Instructions

  • Using a mandoline or box grater, cut potatoes into very thin slices. Place in a large bowl, then add ice water to cover the potatoes and salt. Soak for 30 minutes.
  • Drain the potatoes, then place them on paper towels and pat dry. In a small bowl, combine the salt, garlic powder, and pepper. Set aside.
  • In a cast-iron or other heavy skillet, heat enough canola oil for frying to 375° (about 3 cups worth). Fry the potatoes in batches until golden brown, 3-4 minutes, stirring frequently. Flip them if it is needed.
  • Remove the chips with a slotted spoon, then drain on paper towels. Immediately sprinkle with seasoning mixture. Store in an airtight container.
