I mean, how much better can you get with making mini muffins into French toast? I’d say this is the ultimate way to enjoy them! Sure, you can eat them as-is, but what’s the fun in that? This is a great way to use up any mini muffins that you bought, but haven’t touched, even though you swore you wouldn’t waste them. Not only is this adult-friendly, but it’s 100% kid-friendly! You can make these for your child in the morning, or turn them into a charcuterie board for them to enjoy during their next sleepover. Imagine a board of these French toast bites, fresh-cut fruit, bowls of hot fudge, maple syrup, whipped cream, and much more! You would be the best mom ever, and your house would be the designated house for gatherings.

My daughter very much enjoyed these. Then again, any toddler wouldn’t turn this down. She kept reaching for more, as did my husband. I promised my co-workers I would bring them some, and I was left with enough for one per person! I felt terrible; I’m planning on making these again just for them.

  • Mini Muffins: Any flavor will do! Chocolate chip, blueberry, and banana nut are good examples. I wouldn’t recommend corn mini muffins, as they will fall apart really easily when battered because of how crumbly they are.
  • Light Brown Sugar: This adds that sweetness and gives that beautiful caramelization you love seeing on French toast.
  • Whole Milk, Ground Cinnamon, Eggs, Ground Nutmeg, Salt, Vanilla Extract: The custard mixture for these delectable bites. You can use almond milk for a dairy-free option. It’ll give more flavor to the bites.

French Mini Muffin Toast Bites

You know what’s better than French toast? Taking mini muffins and turning them into French toast bites! Battered with the classic French toast custard and pan-fried in plenty of butter, they’re perfect little sweet treats that you can enjoy after dinner with some ice cream or breakfast with fruit and maple syrup. 

Ingredients

  • 24-count mini muffins, assorted or single flavor, cut in half from top to bottom
  • 1 1/2 cups whole or almond milk
  • 1 tsp ground cinnamon
  • 4 large eggs, beaten
  • 1/4 tsp ground nutmeg
  • 1/4 cup light brown sugar, packed
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • Powdered sugar, for garnish
  • Cut fruit of choice for serving

Instructions

  1. In a large mixing bowl or casserole dish, whisk together milk, cinnamon, beaten eggs, nutmeg, brown sugar, salt, and vanilla extract.
  2. Heat a cast-iron griddle or frying pan over medium heat. Add 1-2 tbsp of unsalted butter and allow it to melt. Let the bubble subside.
  3. Gently place the muffins into the custard mixture, in batches if needed. Allow them to sit for about 10 seconds so they can soak up the custard. Gently lift them with a fork or slotted spatula and let the excess drip off. Some may break apart if they are soft!
  4. Gently place them onto the griddle, flat side down, until golden brown, about 1-2 minutes. Flip and cook the other side for about 1-2 minutes more. Transfer them to a serving platter. Garnish with powdered sugar and serve with maple syrup and cut fruit.
