It’s suitable for all occasions and meals. The prep work is easy, making my recipe a low-effort dish. It’s a great vegetarian option that satisfies cravings of fried food without relying on meat. My recipe can be customized to your preferences by adjust the seasonings or adding some, choosing different dipping sauces, or even incorporating additional ingredients such as lemon zest or fresh herbs.

Ingredients for Crispy Fried Zucchini

  • Zucchini: You need about 1 1/2 lbs of this, which equals out to approximately 2 medium sized zucchinis. If they look small or massively huge, you may need to adjust the frying time for them, as smaller will be a shorter time than bigger ones.
  • Salt & Pepper: Seasoning for the zucchini. Simple yet effective.
  • Vegetable Oil: This is for frying the zucchini. You can opt in for a healthier oil such as avocado oil. You can also use canola oil.
  • All-Purpose Flour, Garlic Powder, Onion Powder: Used to dredge the zucchini to create the coating for it. You can use your preferred gluten-free flour if you have an allergy.
  • Eggs: This is the binder to hold the breading together. You can use olive oil if you wish! It works just as well.
  • Grated Parmesan Cheese, Panko Breadcrumbs, Italian Seasoning: The breading that will be used for the zucchini. The cheese is totally optional, but totally recommended. I mixed it with the breadcrumbs for a nutty and cheesy flavor.

  • Storage: Allow them to cool off completely and the excess oil to drip off, then store in an airtight container in the fridge for up to 3-4 days.
    • Freeze: These freeze well! Evenly spread them out after allowing to cool completely onto a baking sheet and place in the freezer. When its completely frozen, transfer them to an airtight freezer-safe container or freezer ziploc bag. They will keep up to 3 months.
    • Reheat: You can reheat these in the air fryer or oven for that irresistible crunchy texture you had when they were made fresh. You can refry these, however the coating may become a bit burned.
  • Variations:
    • Add some ground cayenne pepper to the flour mixture for a spicy version. You can also add hot sauce to the eggs.
    • Make a buffalo sauce and toss the zucchini in it after frying for a buffalo-style zucchini.
    • Add some lemon zest and dill to the breading and serve with Tzatziki Sauce for a Greek-style zucchini.
    • Use gluten-free flour and gluten-free breadcrumbs for those who have a sensitivity or allergy.

Crispy Fried Zucchini

Crispy fried zucchini is a delicious appetizer or side dish made by coating zucchini slices in a seasoned batter or breading and then frying them until they are golden brown and crispy. Ingredients

  • 2 medium zucchini (about 1 1/2 lbs), sliced 1/2-inch rounds
  • Salt & pepper, to taste
  • 1 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tbsp Italian seasoning
  • Vegetable oil, for frying

Instructions

  1. Season the zucchini rounds with salt & pepper.
  2. Combine the flour with the garlic powder and onion powder in one bowl. In another bowl, whisk together the eggs. Combine the panko breadcrumbs, grated parmesan cheese, and Italian seasoning in another bowl. You have 3 bowls total.
  3. Dredge each zucchini round in flour, dip into the eggs until coated, then toss in the panko mixture until fully coated.
  4. In a heavy-bottomed skillet or Dutch oven, pour the vegetable oil about ½-inch from the bottom. This will ensure even frying. Heat over medium-high heat to 350F.
  5. Without overcrowding the skillet, carefully drop each each zucchini and fry for 4-5 minutes, flipping once, or until crispy. Repeat in batches if necessary.
  6. Serve with marinara or other favorite sauce.
