Ingredients for Roasted Garlic Cream Sauce

  • 2 Garlic Heads: How can you even think to make a roasted garlic cream sauce without the garlic?! By letting it roast in the oven for a longer period of time, it allows the flavors to caramelize and becomes a bit sweeter and mellow in flavor. It’s worth the effort, I promise!
  • Unsalted Butter: Used for the sauce. It adds richness to the roasted garlic when cooking it.
  • Extra Virgin Olive Oil: Drizzling this on top of the garlic heads helps it roast in the oven. Without it, the garlic can dry out and become hard.
  • Salt & Pepper: Season the sauce and garlic!
  • Minced Shallot: Since shallots are mild in flavor, adding a bit of it to the sauce helps flavor it and compliments the roasted garlic.
  • Cream Cheese: This ingredient is important to the recipe; it helps make the sauce silky smooth and adds a tangy note. Cream cheese helps thicken it as well, eliminating the need for flour, which can cause the sauce to be a bit gritty in texture.

Roasted Garlic Cream Sauce

Roasted Garlic Cream sauce is the ultimate companion to elevate any meal. Plump cloves of garlic roasted to golden perfection, melding with velvety cream cheese and heavy cream to create a symphony of taste that will tantalize your palate. Versatile and decadent, this sauce is perfect for drizzling over pasta, smothering grilled chicken, or dipping crusty bread into.

Ingredients

  • 2 heads garlic
  • 1 tbsp extra virgin olive oil
  • Salt & pepper, to taste
  • 2 tbsp unsalted butter
  • 1 tbsp minced shallot
  • 4 oz cream cheese, softened & cubed
  • 1 tbsp fresh parsley
  • 1/2 cup heavy cream
  • 1 cup vegetable broth
  • 3/4 cup parmesan cheese

Instructions

  1. Preheat oven to 400F. Cut the tops off the garlic heads (not the root side), enough to expose the cloves without chopping off too much. Try to remove any excess paper skin without getting rid of it all. This will make it easier when you are squeezing out the garlic. Transfer to a sheet of foil.
  2. Drizzle the olive oil over each head and sprinkle salt and pepper. Cover and transfer to oven; roast for 45 minutes to 1 hour. Remove from the oven and set aside, allowing to cool. Squeeze the cloves out of the garlic heads into a bowl and mash into a paste.
  3. In a medium saucepot over medium heat, melt the butter. Add in mashed garlic and shallots, saute for 2 minutes, and stir often so it doesn’t burn—season with salt. Stir in heavy cream and veggie broth. Bring to a boil, whisking frequently. Stir in the cream cheese and parmesan. Let it simmer for 8-10 minutes until the cream cheese has melted into the sauce and has thickened—season with freshly ground black pepper and parsley.
  4. Serve with pasta, grilled chicken, or roasted veggies. Garnish with extra parsley.
