Slippery Dumplings

Nothing is more comforting than stewed dumplings in a rich, silky chicken broth! These dumplings are typically served with chicken and gravy for the perfect comfort dinner. It can also be done alone if you’re feeling under the weather.

I am rolling a series on my Instagram called Around the Globe: USA Series. For every state I roll, I make one dish that’s either a signature dish or one that originated from that state. So far, I have done 27 states, which is more than half way! I’m very surprised with how far I’ve come and the dishes I’ve made.

I rolled Delaware for this series, and came across the recipe for slippery dumplings. It’s sort of like making chicken and dumpling soup. Although the dumplings aren’t rolled out, it’s almost the same concept. Slippery dumplings is a dish typically served with chicken and gravy at church dinners. It’s an old-fashioned dish that originated in Delaware. It’s delicious, comforting, and super simple to make.

How to make Slippery Dumplings

Making the dumplings are actually very easy. It requires no resting and comes together in minutes. The dumplings are then simmered in chicken broth, which is what makes this dish so silky and comforting.  (Full ingredient amounts and complete instructions are available in the recipe card down below).

  • Dumplings: Flour, Baking Powder, Salt, Shortening. Traditionally used to make the dumpling dough. When rolling the dough out, you want to make sure the dough is thin. They will puff up as it simmers in the broth.
  • Chicken Broth & Unsalted Butter: The liquid used in this dish. This will cook the dumplings thoroughly. You can use another type of broth such as beef or vegetable.

  • Storage: Keep in an airtight container in the fridge for up to 3 days.
  • Why did the liquid reduce? It will reduce as the dumplings are cooking. Rolling the dough into larger noodles allows more of the starch to dissolve and thicken the broth.

Slippery Dumplings

Nothing is more comforting than stewed dumplings in a rich, silky chicken broth! These dumplings are typically served with chicken and gravy for the perfect comfort dinner. It can also be done alone if you’re feeling under the weather.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup shortening
  • 1/2 cup hot water
  • 6 cups chicken broth
  • 1 tbsp unsalted butter

Instructions

  1. Whisk together the flour, baking powder, and salt in a large bowl. Cut in the shortening with a pastry blender or fingers until the mixture forms fine crumbs. Stir in enough hot water to make a firm, but manageable dough.
  2. In a 4-quart saucepan, bring the chicken broth to a boil. Add the butter and let the butter melt.
  3. On a floured board, roll out the dough to 1/8 inch thickness. Cut into 2-inch squares. Drop the dumplings one at a time into the boiling broth.
  4. Reduce the heat to medium and cook the dumplings, stirring gently a few times to keep the dumplings from sticking together, uncovered until tender, about 15 minutes. Spoon the dumplings into a serving dish with some of the cooking liquid and serve.

Notes
