A classic appetizer that my family always asks for! These addicting spinach brownies will have you making not one, but TWO batches every time! Maybe three. With such simple ingredients, this is baked to perfection in about 30 minutes with easily accessible ingredients in your house. Trust me when I say, this will be your new “You gotta bring this to the next gathering” dish!

I always make this whenever I’m invited somewhere. A gathering, Thanksgiving, Christmas, anything! Going to my sister-in-law’s house? Gotta bring them! I did for Thanksgiving and they told me they have been nonstop eating it. My mother-in-law called it spinach crack. That’s how addicting they are! You can even tweak the recipe a little bit if you need to. This recipe is going to be passed down. Every family has that one recipe that runs in the family, and I’ve found that one long ago.

All this recipe requires are ingredients easily accessible in the house such as flour, baking powder, eggs, butter, onions, mozzarella cheese, and spinach, whether it be frozen or fresh. I use frozen spinach every time, but if you choose to use fresh, I highly recommend you buy two 5 oz bags. Spinach shrinks when blanched or cooked, so it’s better to have more than have less. If the mixture is too wet, you can add more flour to it to thicken it up. The baking powder helps make it rise, but you want thick brownies. It’s more enjoyable that way.

Some tips and facts!
- You can add different ingredients to the recipe. You can add crumbled bacon to it, swap out the mozzarella cheese for cheddar, or add some minced garlic. It’s entirely in your ballpark! I haven’t messed with the recipe only because if I make it differently, I will have very angry people after me!
- Add more spinach if one package isn’t enough! I only use one (10 oz) package of frozen spinach for my recipe, but if you think it won’t be enough, you can add more spinach to it.
- This bakes in about 30 minutes. To test to see if it’s done, insert a toothpick into a few spots. If it comes out clean, it’s ready. Quite an obvious tip, but there’s some people out there who might just be learning how to cook.
- Eat this at any time of day. Serve this as an appetizer at a gathering. You can even make these for breakfast and serve with a poached egg on top. (That sounds amazing actually) Have this as a snack, whether it’s 3am munchies or a midday snack! It’s perfect for any time of day and holiday.

Spinach Brownies
Ingredients
- 1 (10 oz) package frozen spinach, defrosted and drained
- 1 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1 1/2 teaspoon baking powder
- 2 eggs
- 1 cup milk
- 1/2 cup butter, melted (1 stick)
- 1 medium onion, chopped
- 1 (8 oz) package shredded mozzarella cheese
Instructions
- Preheat oven to 375F. Lightly grease a 9×13 inch baking dish with butter or nonstick cooking spray.
- Place spinach in a medium saucepan with enough water to cover. Bring to a boil. Lower heat to simmer and cook until spinach is defrosted completely. (*1) Remove from heat, drain and wring out the excess water by wrapping the spinach in a towel and squeezing it out. Set aside.
- In a large bowl, mix flour, salt, and baking powder. Stir in eggs, milk, and butter. Mix in spinach, onion, and mozzarella cheese.
- Transfer the mixture to the prepared baking dish. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
Notes:
(*1) You can also microwave the spinach in a bowl with a little bit of water to steam it. Microwave for 5 minutes until the spinach is completely defrosted. You will still need to wring out the excess water from the spinach.
