One of the healthiest snacks I’ve ever made, and very easy to make too! All you need is 5 ingredients plus a working freezer. This is my take on a no-bake healthy cookie that can be eaten in the morning for breakfast, as a snack, or as a dessert if you wish! This recipe is a hit with kids and adults, and always go quick! I had people hovering over me to grab one before I could even get a picture of them. For this recipe, if it comes out too dry in your judgment, just add a bit more peanut butter. No such thing as too much peanut butter!

Jam packed with crunchy peanut butter, it is the binding that holds together the oats, the chocolate chips, but with a touch of sweetness from the honey. Store this in the freezer for the best tasting snack. I have not tried storing this in the fridge, so if you have, let me know if it works. The smell when you make it just makes you want to jump right into the batter itself. For these delicious snacks, I used peanut butter that is usually packed with the oil on top. It tastes 100% better than Skippy…just an opinion though. Plus, the ingredients are usually just peanuts with no additives or sugar. Peanut butter is always a welcome gift in cookies, ice cream, even noodles! I love peanut noodles…YUM.

What else can be done with these energy-packed snacks?
- There’s different variations you can do! You can add:
- Dark chocolate chips instead of semi-sweet
- Shredded coconut
- Cranberries
- Chopped walnuts, pecans or almonds
- Cocoa powder
- Hemp seeds
- Chia seeds
- There’s definitely more, but this is what I could come up with off the top of my head.
- What do I do if it turns out too dry? If the mixture seems too dry try adding a splash of water. I do 1 tablespoon at a time. This helps bind everything together. Alternatively, you can always add a scoop more of peanut butter, honey or maple syrup to bind everything up!
- You can make bars out of these! Instead of rolling out into balls the mixture can be placed in a square baking dish lined with parchment paper. Refrigerate and cut to make no bake energy bars!

No-Bake Peanut Butter Oat Bites
Ingredients
- 1 ¼ cup rolled oats
- ½ cup mini semi-sweet chocolate chips, plus more if desired
- ¾ cup crunchy peanut butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
Instructions
- Combine oats, chocolate chips, flaxseed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set, about 1 hour.
