These fries loaded with the same toppings as your baked potato make this a perfect appetizer for football game night or as a snack in the middle of the night! Forget going to your local bar for these, it’s so easy to make at home with little ingredients. Try making these with Homemade French Fries, or frozen fries will do the same justice!

Freshly shredded cheddar cheese is much better than pre-shredded, and let me tell you why. Pre-shredded cheese is convenient, but it contains an anti-caking agent which prevents the cheese from melting into its true, gooey form. If you shred a block of cheese, it’ll melt better and you’ll have that cheesy, Instagram-worthy pull you want in every cheese dish.
How to make these Loaded French Fries
The ingredients are minimal and can be easily found in your pantry or fridge, or if you need to buy them, it won’t cost you a fortune!

- French Fries: Be it freshly made or frozen, you’ll need to fry/bake them before putting the toppings on.
- Sharp Cheddar Cheese: Shred the cheese by hand and put it over the fries when they’re still piping hot.
- Bacon: I prefer freshly fried bacon, but you can opt for the predone bacon bits, such as McCormick.
- Sour Cream: Full fat is the way to go, but you can opt in a lighter sour cream if you want to feel a little healthy!
- Scallions: Otherwise known as green onions, these are essential to the loaded potato. You can also used fresh chopped chives, but scallions give it a little more flavor.
Fry your fries or bake them. Take them out of the fry oil/oven, sprinkle the cheese on top, and allow it to melt. Sprinkle your bacon bits, dollop some sour cream, then sprinkle the scallions. All done! This recipe is so simple and takes almost no time at all. I would opt to make this instead of spending $12+ on a restaurant’s version.
Tips and FAQs:
- You can make a cheese sauce and pour that all over the fries before adding anything else on it.
- You can air fry the french fries if you’re making them by scratch. It’s healthier than frying in fatty oil. You can also air fry frozen french fries, and still get the same, crunchy texture.
- How do I reheat these fries? Personally, I would reheat them in a 350°F oven for about 10 minutes or until heated through. However, this is a last resort because they don’t really reheat too well. The fries will be a bit soggy, but it’ll still be delicious!
- Can I use a different cheese? Of course you can! I would try freshly shredded monterey jack and white cheddar, maybe do a buffalo cheese sauce and sprinkle blue cheese on it. Be sure to use a cheese that will melt well. Cheeses such as feta, halloumi, and cotija will not melt as well as others.

Loaded Baked Potato Fries
Ingredients
- 32 oz french fries (*1)
- Salt and pepper, to taste
- 8 oz freshly shredded sharp cheddar cheese, or more if desired
- 4 bacon strips, cooked and crumbled
- 3 scallions, cut 1/4 inch bias
- 1/4 cup sour cream
Instructions
- If you are using frozen fries, bake according to package directions. If you are making fresh fries, refer to the notes.
- Once the fries are done, start assembling the loaded fries. Immediately sprinkle with cheddar cheese (*2). Sprinkle with bacon. Drizzle or dollop with sour cream. Sprinkle with green onions.
- Serve immediately!
Notes:
(*1) If you are using frozen fries, bake them according to the directions they give you. If you are making them fresh, I would wash 2 lbs of russet potatoes under cold water to get rid of the excess dirt, then cut them into fries (you’re choice of leaving the skin on!). Fry them in hot canola oil in a pot, being careful not to overcrowd them, and fry for 3 minutes or until the outside is crispy and the inside is soft.
(*2) If you are making a fresh cheese sauce to pour over the fries, be sure to do that first before sprinkling the shredded cheese.

My cat is 17 years old. We took him to get groomed because he had a bunch of big knots on him and no matter how much I brushed him, they would never stay off him. When we picked him up, he was twitching and not responsive. He wasn’t his normal self. We took him to the ER and he was cold with no temperature reading, his blood sugar was low and he was having a seizure. The hospital was able to help him. I remember he was wrapped in towels and a hoodie because they were trying to warm him up. I was hysterical crying. I thought my fur baby was going to not survive and needed to pass on. I’m so glad he’s better, but his visit bill is about $400 USD, plus extra funds to run tests later to make sure it’s nothing serious. We need as much help as we can get.
