I was looking for an Ice Cream recipe that didn’t require an ice cream machine…low and behold, I did a little experimenting! I found sweetened condensed milk and heavy cream so I thought to myself “Let’s try this out.” The sweetness of the condensed milk and the fluffiness of the heavy cream that was whipped just made this incredible. Best part? NO SUGAR ADDED! This came out so sweet already when I tasted the batter that I felt there was no reason to add any more sugar. I made chocolate ice cream because I love chocolate, but you can make other flavors! Of course, there might be some variations of ingredients, so be sure to look it up before trying!
What does No Churn mean?
No-churn ice cream means there’s no need for an ice cream machine to make creamy ice cream. Most homemade ice creams start with an egg custard base that is cooked and tended to with such constant care. No churn ice cream can be made in hours in the easiest way! Mix a few ingredients, place in a freezable pan, check in at the four hour mark and voila! You have ice cream.
Flavors of the Ice Cream World
Making ice cream is like an empty canvas. You can create anything your heart desires from it. You can make it vanilla, chocolate, chipotle spiced, strawberry, avocado, even corn ice cream! There’s hundreds, maybe even thousands of flavors!
- Vanilla
- Chocolate
- Cookies N’ Cream
- Crab (Created in Hokkaido, Japan. Apparently, it’s sweet!)
- Mint Chocolate Chip
- Mango
- Spumoni
- Matcha
- Chocolate Chip Cookie Dough
- Buttered Pecan
- Cookie Dough
- Cheesecake (Strawberry, chocolate or plain!)
- Apple
- Strawberry
- Moose Tracks
- Pumpkin
- Neapolitan
- Ube (popular in the Phillippines. It’s made out of purple yams)
- Rocky Road
- Dulce de Leche
- Coffee
- Chocolate Chip
- Pistachio
- Earl Grey
- Peppermint
- Birthday Cake / Cake Batter
- Bacon (yes, it’s a thing!)
- Cotton Candy
- The list goes on forever!
What about toppings?
After creating the batter, you can add whatever toppings after 2 hours of freezing. Toppings can include fresh strawberries, chocolate chips, Ben & Jerry’s Cookie Dough Chunks (which is what I used), peanut butter cups, etc. Just mix it in and let it continue to freeze!
Some tips for No Churn Ice Cream
- Get the right ingredients. Because this homemade ice cream recipe requires so few ingredients, it’s important that you buy exactly what’s listed in the recipe card below. Don’t try to substitute lower fat or lower sugar alternatives otherwise your ice cream won’t turn out right.
- If adding additional extracts, like almond or mint, to the ice cream base, be sure to add only a little bit at a time. Vanilla extract is tough to overdo, but other extracts are much more potent.
- Lastly, be sure to chop up your mix-ins. Larger nuts, chocolate chips, M&M’s, and such become rock hard when frozen, so it helps if they’re chopped up first.

No Churn Chocolate Ice Cream
Ingredients
- One (14 oz) can sweetened condensed milk
- 1/2 cup unsweetened natural cocoa powder (Hershey’s is the best way to go)
- 1 tsp pure vanilla extract
- Pinch salt (fine preferred)
- 2 cups cold heavy cream
Instructions
- **Be sure to put a 9x5x3 inch metal loaf pan in the freezer while doing this so it’ll be chilled.
- Whisk the condensed milk, cocoa powder, vanilla, and salt in a large bowl. The mixture will become very thick, don’t worry! Set this aside.
- Whip the cream in a mixer on medium-high speed until firm peaks form, about 2 minutes. Keep an eye on it. Leaving it unattended could leave it over mixed.
- Fold about 1 cup of the whipped cream into the cocoa mixture with a rubber spatula until combined, then fold the lightened cocoa mixture into the whipped cream until well blended and creamy.
- Pour into a chilled 9x5x3 inch metal loaf pan and freeze, covered, until thick and creamy, about 2 hours. At this time, if you want to swirl in any toppings, do it now. If not, let it freeze for 3 more hours.
